doctors need to know the sex of their patients for multiple clinical (safety) reasons. Sex is determined at conception and recognised often in utero and described at birth. It's not assigned like a random dicethrow. We know this.

Patients are not props! Doctors have to manage severely unwell, in pain, worried and vulnerable patients. They maybe confused or have dementia, they are not props for affirmation of gender identities and fragile egos in the medical profession.
