Baristas do not in fact just sell you raw coffee beans. Their labor adds value to the coffee and the surplus value generated by this labor creates profits for Starbucks or other coffee shops. Baristas are clearly productive labor.
No, they don't. The production of coffee starts on the farm and ends when it is shipped to market. You said it yourself; the surplus value created is realized in the exchange. Barista didn’t generate surplus value—they only helped realize it.

I’m an electrician and have a history degree (it’s close enough to sociology). Most of my coworkers would rather their kids major in sociology and have a cushy office job than be an electrician and develop the chronic pain we experience.
