Tocino de cielo 🇪🇸 means “heavenly bacon”—but it’s just egg yolks, sugar, and water. Born in a 14th-c. Spanish convent, it’s richer than flan, but with no dairy. Caramel-lined molds are filled with a yolk syrup, baked, then chilled overnight. Does it sound good to you? 🍮

One bite in and I knew Brunsviger—a Danish 🇩🇰 coffee cake—wasn’t going to be a one-time bake. Soft. Sweet. Sticky with caramel. The kind of cake you cut “just a sliver” of… five times.


Vacherin is the French 🇫🇷 answer to an ice cream cake—layers of crisp meringue, whipped cream, ice cream, and fresh fruit. Like a pavlova, but frozen and perfect for summer. Would you pick this over birthday cake?

Have you ever had Lithuanian 🇱🇹 rye bread? Slightly sweet, slightly sour, and central to the cuisine. Its depth comes from a 4-stage process: red rye malt scald, fermented sour, opara (compound sponge), and a final dough with honey, sugar, & salt. Too complex to bake at home?

In Czech 🇨🇿 baking, tvaroh—a fresh farmer’s cheese—shows up in all kinds of pastries. One of the best-known is tvarohové řezy: a layered cake with a tangy cheese filling. The base might be vanilla, chocolate, or nut—often with jam or fruit added to the filling. Sound good?

In Puglia, Italy 🇮🇹 there's a town called Ceglie Messapica with its own signature cookie: u’ piscquett’l. Naturally gluten-free, they're made with almond flour, lemon zest, orange liqueur (rosolio all’arancia), and filled with cherry jam. Would you bake these at home?


On the theme of homestyle summer desserts: in Denmark 🇩🇰, they eat koldskål & kammerjunkere. A chilled, sweet buttermilk soup topped with crunchy cookies & fresh berries — eaten with a spoon, it’s a classic Danish summer treat. Would you try it?

My kids are having Kirschenmichel for breakfast. 🍒 This southern German 🇩🇪 bake is essentially a sour cherry bread pudding. Comforting, lightly sweet, and with a pop of sour from the fruit. Let me know if you'd like the recipe!
