You can now draw across the line of symmetry with Strokes in Retopoflow 4 beta. Improved mirroring is coming to the other tools as well. Oh, and there are now quick keys for using Tweak and Relax from any tool!
I personally find that an eye for proportions and form is a more desirable trait in a junior artist than knowledge of technique. Show me you can eyeball reference and match the base form. Technique generally is easier to train up.
