Helping someone move from a page builder to a WordPress block theme and seeing that immediate passing Core Web Vitals score- very satisfying. Would love to see more plugins moving away from using jQuery, though.

You can spin up Woo with everything configured- store settings, plugins, theme- using the new Blueprint Importer/Exporter. (It runs Playground Blueprints under the hood.) This feature is in beta so we'd love to hear from devs about how it can fit into your workflow.
